I was not feeling that well today so I decided to make a simple dish. Not super excited but nice and it’s done in no-time! Pasta with salmon, spinach and zucchini. I think this is the first dish I actually ever made myself. My mom doesn’t like fish so when she was not at home, my sister made this for the two of us. I loved it!

For one very large portion (or two slightly smaller) you need: pasta, smoked salmon, 1/2 zucchini, handful of fresh spinach, 1 lime, 1/2 cup of crème fresh, coconut oil (or olive oil), salt and pepper.

Boil water and cook the pasta according to the package. Slice the zucchini in little pieces and bake them in olive oil (I used coconut oil, no special reason). Now add the spinach and let it fry until the spinach has shrunk (do you say that in English?). Slice the salmon in little pieces and add it. After a minute or two, add the crème fresh. Slice the lime in half and add the juice of half the lime with the rest. Add some salt and pepper. Now your pasta is probably done as well! Add everything together and add some parts of lime if you want to have some extra.

This is not my best dish ever but it taste nice and it’s very easy to make. For those days when you don’t know what to eat and also don’t really feel like cooking but hey, you have to eat something!

My roommate Liset got a tini tiny oven for her birthday last month and I’m experimenting a little bit with it. It’s called a snack oven and we needed some time to figure it out. For example, you can’t choose the heat of the oven, but we couldn’t find at what degree it is on. Pretty confusing haha as we didn’t want to ruin our meal! Now we figured out it’s pretty hot (everything else surrounding the oven gets pretty hot as well) and I tried out some one-person-meals!

This meal is supereasy and perfect when you’re eating alone. For one person you need: 1 sweet potato, garlic, onion, 1/2 zucchini, parsley, goat cheese, mixed nuts (or other nuts but I had the mixed version already at home), salt and pepper. You can also add a chili pepper if you like it spicy.

Preheat the oven. Slice the sweet potato in small pieces and toss the pieces with the oil, garlic, onion, parsley, salt and pepper. Lay everything on a baking sheet and bake it for 15 minutes. In the meanwhile, slice the zucchini in small pieces. After 15 minutes, add the zucchini, goat cheese and nuts and put it back in the oven for 10 minutes. Done!

For me, this month is all about time management. I’ve got so much going on: uni, work, blogging and in between I like to hang out with friends or do danceclasses as well. Tonight I had dinner with my roommate Sofie but as I got home from work around 18:30 and had to go to danceclass at 20:30 we run to the supermarket, bought some seasonal mushrooms and pasta and made this delicious pasta dish in 20 minutes!


Things you need: pasta, mushrooms (we got the seasonal package), fresh spinach, garlic, onion, bacon, parsley, cream and parmesan.


First: boil some water for the pasta and use the instructions on the package. Now put the spinach and the (crushed) garlic in the food processor with some olive oil


Now it looks like this


Fruit the onion in some olive oil and add the bacon


Slice the mushrooms


When the bacon is done, add the mushrooms and let it fry. After that, add the spinach and some cream.


Mix it all with the pasta and put it on a plate. Now add some parmesan cheese and parsley

Today was one of those days that you just can’t decide what to cook for dinner. Very rarely in my case, as I usually think about supper all day long. But not today. In most of these cases I make one of my always-awesome pasta dishes but for some weird unknown reason I really didn’t feel like eating pasta today. So after wandering around for a while, searching the internet for some recipes I decided to make pancakes! With an zucchini-peas-mushrooms saus.


The ingredients! For the pancakes you need flour, milk, eggs and a little but of salt. For the saus, zucchini (half), mushrooms, onion, garlic, peas, parsley, cream and bacon (which is not in the picture because it was already in the frying pan).


First, fry the bacon and when it’s done, put them on a plate and put the onion in the same pan.


Now slice the onion and the zucchini, crush the garlic and add everything in the pan. Also add the peas.


Now it’s time to make the pancakes! With 1 egg, 1/4 l milk and 125gram flour you’ve got a great mix for around 3 pancakes, which is perfect if you’re eating alone. Also add some salt.


Add some butter in the pan and make some awesome pancakes! Be careful that you don’t make them too thick.


In the meanwhile, add the bacon and chopped parsley to the mix. You can add some cream if you like it creamy.


And they’re done!
