I was not feeling that well today so I decided to make a simple dish. Not super excited but nice and it’s done in no-time! Pasta with salmon, spinach and zucchini. I think this is the first dish I actually ever made myself. My mom doesn’t like fish so when she was not at home, my sister made this for the two of us. I loved it!

For one very large portion (or two slightly smaller) you need: pasta, smoked salmon, 1/2 zucchini, handful of fresh spinach, 1 lime, 1/2 cup of crème fresh, coconut oil (or olive oil), salt and pepper.

Boil water and cook the pasta according to the package. Slice the zucchini in little pieces and bake them in olive oil (I used coconut oil, no special reason). Now add the spinach and let it fry until the spinach has shrunk (do you say that in English?). Slice the salmon in little pieces and add it. After a minute or two, add the crème fresh. Slice the lime in half and add the juice of half the lime with the rest. Add some salt and pepper. Now your pasta is probably done as well! Add everything together and add some parts of lime if you want to have some extra.

This is not my best dish ever but it taste nice and it’s very easy to make. For those days when you don’t know what to eat and also don’t really feel like cooking but hey, you have to eat something!

For me, this month is all about time management. I’ve got so much going on: uni, work, blogging and in between I like to hang out with friends or do danceclasses as well. Tonight I had dinner with my roommate Sofie but as I got home from work around 18:30 and had to go to danceclass at 20:30 we run to the supermarket, bought some seasonal mushrooms and pasta and made this delicious pasta dish in 20 minutes!

Things you need: pasta, mushrooms (we got the seasonal package), fresh spinach, garlic, onion, bacon, parsley, cream and parmesan.

First: boil some water for the pasta and use the instructions on the package. Now put the spinach and the (crushed) garlic in the food processor with some olive oil

Now it looks like this

Fruit the onion in some olive oil and add the bacon

Slice the mushrooms

When the bacon is done, add the mushrooms and let it fry. After that, add the spinach and some cream.

Mix it all with the pasta and put it on a plate. Now add some parmesan cheese and parsley

Hi there! Last night my dad and I made the Pasta Pesto with Chicken from Jamie Oliver. According to Jamie it should be done in 15 minutes but we were cooking for 45 minutes. Still it’s not that hard to make and very delicious!

What we need: chicken, fennel seed (we used chicken spices), rosemary, olive oil, garlic, fresh peppers, cherry tomatoes, French beans, fresh spinach, fresh basil, tonsil, parmesan cheese, lemon and fresh pasta (but we used normal tagliatelle). Quite a lot but I’ve noticed that Jamie uses a lot of the same spices so if you want to make some more Jamie Cuisine, you only have to buy them once.

Put the fennel seeds (or other spices) with the rosemary on the chicken. Now put it in some baking paper or fresh foil and smash it with a rolling pin until it’s 1,5 cm thick.

Now put it in the pan with garlic and the sliced pepper. Now boil some water for the French beans. Boil them for about 6 minutes. If you use fresh pasta you can add them now with the beans but if you don’t you have to boil some extra water for the pasta.

It’s time for the home made pesto! Put the basil, tonsil, parmesan in the food processor.

Add the garlic and squeeze the lemon. Add some olive oil and mix it all together. You can put some boiling water from the beans with the pesto if it’s not creamy enough.

Slice the tomatoes in half (or in quarters if you use slightly bigger tomatoes)

When the beans are almost ready, add the spinach.

Now pour off the water, add the pasta en pesto and mix it together.

Now we’re done!
