On Sundays, Michiel and I usually cook together and have dinner with just the two of us or with some friends. Last night as well, and we decided to make tortillas! We made it once before and they were really, really nice. Made some changes now as we made a vegetarian version (but you can add some minced meat if you like) and the avocados were all gone in the supermarket so we had to buy guacamole dip which is a lot less tastier than home made guacamole.
Here you see almost everything you need! Olive oil, garlic, passata, lemon, tortilla, fresh pepper, onion, corn, black beans, paprika, cucumber, tomatoes, apple, salad, cheese, yoghurt, chili sause, guacamole (or 3 avocados and lemons so you can make it yourself) and tortilla chips of you like. You can also add some coriander if you like it.
I usually make the salad while Michiel is busy with the rest. For this one you need lettuce, cucumber, tomatoes, apple, lemon and you can spice it up a little bit with a pepper.
Slice it all in small pieces and put it together in a bowl. Then rasp the apple on top, put some lemon juice over it and you’re done! The last time I started now with the home made guacamole but today we bought it in the supermarket. We did add a little bit lemon juice to make it slightly better.
The tomato sause is going over the tortillas. Fruit the garlic, then add the passata and lemon juice of 1 lemon. Add some salt en pepper and let it thick for a while.
Now slice the onion, pepper and paprika and put it in another pan. If you like some meat with it you can also add some minced meat.
Add the corn and black beans.
Now it’s time to make the tortilla’s! We preheated them in the microwave so they are a little bit more flexible. Now add some guacamole on the wrap, add the vegetable mix and fold it together. Do this with all the wraps and put them in a casserole.

Now add the tomato sause over the wraps…
…and finish it off with some cheese. Now put it in the oven for 15 minutes.
You can also add some cheese over the nachos and put them in the oven too.
Now it’s finished! You can make a dip from yoghurt and chili sause which you can put over your tortillas.
