Lately, I saw a lot of recipes on the internet including lemon and pasta. I’ve never had lemon pasta so I gave it a try. I used this recipe from Sandra of Niotillfem, however translated from Swedish to English using Google translator which isn’t always that trustworthy so I might have done some things differently.

What you need: Pasta, shrimps (or gambas), garlic, asparagus, spinach, leek, lemon, parsley, parmesan.

Chop the parsley and mix it with a lot of parmasan and lemon zest.

Remove the thick end of the asparagus and chop them into pieces.

Boil the asparagus and pasta together

Fry the garlic and chopped leek for a few minutes in a large pan.

Now add everything else, the parsley, lemon zest, parmesan, spinach, shrimps, pasta and asparagus. Add a lot of lemon juice and pepper/salt.

Doesn’t look all that fancy on a plate but it was really nice! Maybe I’ll add some zucchini next time in stead of spinach as I’m not such a big fan of spinach. The lemon makes the dish really fresh. Bon Appetit! I’d love to hear your lemon pasta recipes!

    Ziet er een beetje apart maar wel lekker uit. Ik houd alleen niet zo van garnalen maar misschien probeer ik het eens op een andere manier 🙂
