This year, I made the desert for our Christmas dinner. I decided to make carrot cake cupcakes, as I’m a huge fan of carrot cake. Though, I’d never made carrot cake before so it was kind of a try-out. I used this recipe and I’ve got to say, I’m quite content with the end result!
You have to do quite some grocery shopping to make cupcakes for 30 persons. Look at the recipe for the exact ingredients.
We start with the sugar and eggs. Mix them till it looks like this.
Now it’s time to add flower and, ofcourse, carrot!
The raisins and walnuts can be added as well.
In the oven for 30 minutes and they’re ready!
I made a lemon topping as well, which is filled with sugar and cream cheese. So amazingly good.
And then I forgot to make a picture of the end result! They were almost all gone so I snapped a picture of this one, with half-melted icecream. Better pictures next time!
