A few months ago, my friend Linda and I made this delicious cous cous. So tonight, when I didn’t know what to make for supper, I decided to make it again!

What you need: zucchini, paprika, hüttenkäse, mint, apple, shallot, asparagus, apricot and couscous. I added ham as well but it’s not on the picture. Chop everything into small pieces.

I’ve got some questions about the hüttenkäse, so I looked it up and its called cottage cheese in English!

To make couscous is quit difficult I think. You need to have the precise amount of water with the couscous to make it perfect. Mine is often too wet. The best thing to do is try to follow the precise instructions on the box and then try something! After a couple of time it will be better, I promise.

Heat some oil in a frypan and fruit the shallot. After a while, add the paprika and zucchini. All chopped ofcourse. I like my paprika a little bit raw so I didn’t fried them that long. Take the pan off the fire and add everything else. Mix it all together and leave it for a couple of minutes so the rest get a little bit warm as well.

Put the couscous and the vegetables on a plate and add a lot of hüttenkäse on top. I forgot it but some cinnamon would make it even better! Bon appetit!

I love cous cous! At school in France, we used to be served cous cous with chicken and ratatouille for lunch weekly. It was so delicious.

Ziet er heerlijk uit! Ik heb me wel al vaak afgevraagd wat hüttenkäse dan wel mag zijn, volgens mij heb je dat niet in België?

That looks absolutely delicious, I’m going to try your recipe. But… what is hüttenkäse?

    Oeeh that look delicious!
The recipe has a lot in common with the one my mother always makes from a weightwatchers book. (:
